Why I Love 4 Ingredient Peanut Butter Cookies

Everyone in my family loves a good peanut butter cookie, What I love is a peanut butter cookie that is easy to make, and this recipe is just that! To make these cookies you need only 4 ingredients and one bowl!

The best part is, no flour needed to make these cookies! They are secretly gluten free! This allows me to make them as a treat for the kids even when I’m limiting gluten for my youngest daughters eczema.

You would think cookies without flour would turn out poorly, but not these cookies! They are just as delicious, if not more delicious, than their regular peanut butter cookie counterparts. Seriously you will never believe they are flourless!

Tips for These Cookies

  • Use a room temperature egg – A room temperature egg will bind more easily with the other ingredients and give your cookies a more cohesive cookie dough and cookies with a better texture.
  • Use fresh ingredients – The baking soda in this recipe is necessary to leaven the cookies. Make sure your baking soda is fresh for the best results.
  • Don’t over cook – When you take the cookies out of the oven, they may appear slightly undercooked. The cookies will continue to cook for a few minutes after being removed from the oven. If overcooked these cookies will be very crispy.

What Type of Peanut Butter Should I Use?

In recommend using creamy peanut butter when making these cookies, but crunchy peanut butter can also be used for a fun twist. For this recipe I do not recommend using natural peanut butter.

Recipe Variations

There are a few delicious ways to adapt this flourless peanut butter cookie recipe you might enjoy:

  • Other nut butters: Try almond butter or other nut butters for a flavor twist.
  • Chocolate chips: Make decadent peanut butter cookies by adding about 1/2 cup of mini semi-sweet or bitter-sweet chocolate chips to the batter.
  • Spices or cocoa powder: Try adding some cinnamon, pumpkin spice, or cocoa powder to the cookie dough.
  • Instant coffee/espresso: Add 1- 1 ½ tbsp for a caffeine pick-me-up.
  • Peanut butter powder: Adding 1-2 tbsp of PB powder (plus an extra splash of milk if needed) enhances the peanut flavor and adds more protein.

How to Store 4 Ingredient Peanut Butter Cookies

These 4 ingredient peanut butter cookies are best eaten warm in my personal opinion, but they are still delicious for days if stored properly.

Keep the cookies in an in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. If refrigerating leftovers, bring them to room temperature before serving.

If you want to make these peanut butter cookies ahead of time you can freeze them. Keep the cookies in an in an airtight container and store for up to 3 months in the freezer. When you are ready, pull them out of the freezer and allow them to thaw fully before serving.

4 ingredient peanut butter cookies have perfectly crisp edges, chewy centers, and are full of peanut butter flavor. They can be made in one bowl with only 4 ingredients! They are easy to make and even easier to snack on.

Ingredients

  • 1 cup creamy peanut butter

  • 1 cup granulated sugar

  • 1 large egg, room temperature

  • 1/2 tsp baking soda

Directions

  • Preheat your oven to 350°F (177°C) and line a cookie sheet with parchment paper.
  • In a large mixing bowl add the sugar and baking soda. Whisk until the baking soda is evenly distributed.
  • Add in the peanut butter and room temperature egg, stirring until everything is combined. Your cookie dough will have a slightly crumbly texture but stick together when formed into balls.
  • Roll out tablespoon portions of cookie dough into smooth balls and place them 2″ apart on the parchment lined baking sheet. Create a cris-cross pattern using a fork on each cookie if desired.
  • Place the cookies on the lower center rack of your preheated oven and bake for 10 minutes.
