Everyone in my family loves a good peanut butter cookie, What I love is a peanut butter cookie that is easy to make, and this recipe is just that! To make these cookies you need only 4 ingredients and one bowl!
The best part is, no flour needed to make these cookies! They are secretly gluten free! This allows me to make them as a treat for the kids even when I’m limiting gluten for my youngest daughters eczema.
You would think cookies without flour would turn out poorly, but not these cookies! They are just as delicious, if not more delicious, than their regular peanut butter cookie counterparts. Seriously you will never believe they are flourless!
Tips for These Cookies
- Use a room temperature egg – A room temperature egg will bind more easily with the other ingredients and give your cookies a more cohesive cookie dough and cookies with a better texture.
- Use fresh ingredients – The baking soda in this recipe is necessary to leaven the cookies. Make sure your baking soda is fresh for the best results.
- Don’t over cook – When you take the cookies out of the oven, they may appear slightly undercooked. The cookies will continue to cook for a few minutes after being removed from the oven. If overcooked these cookies will be very crispy.
What Type of Peanut Butter Should I Use?
In recommend using creamy peanut butter when making these cookies, but crunchy peanut butter can also be used for a fun twist. For this recipe I do not recommend using natural peanut butter.

If you want to make these peanut butter cookies ahead of time you can freeze them. Keep the cookies in an in an airtight container and store for up to 3 months in the freezer. When you are ready, pull them out of the freezer and allow them to thaw fully before serving.
